Cowboy Caviar


1 15-oz can black beans, drained and rinsed
1 15-oz can corn, drained and rinsed
1 red bell pepper, small diced
1/2 bunch cilantro, chopped
1 tablespoon extra virgin olive oil
2 teaspoon apple cider vinegar
Salt and pepper, to taste


This one is pretty foolproof- put everything into a bowl, give it a stir and a taste, and adjust seasonings. This is even better after it sits in the refrigerator for a few hours, so it’s a good recipe to make ahead and munch on throughout the week.

In addition to being eaten on chips, this is great:

  • spooned over grilled or baked meat
  • added to any leafy salad
  • mixed with a cooked grain like quinoa
  • eaten all by itself (why not!)
