Good Garbanzos


1 15-oz can garbanzo beans, drained and rinsed
1 small carrot, shredded
1 tablespoon dried currants
1/4 bunch parsley, chopped
Fennel fronds (optional)
Zest from 1 lemon
1 teaspoon rice wine vinegar
1 tablespoon extra virgin olive oil
Salt and pepper, to taste


Add all ingredients to a bowl, stir, taste and adjust for seasonings.

The fun mix of flavors in this dish are begging for experimentation. Try:

  • different leafy herbs: basil, tarragon, cilantro (you can’t go wrong)
  • add in a little yogurt to make a creamier salad
  • try orange instead of lemon
  • add fresh fruit (chopped apples would be nice)
