DIY Salad Dressing

Our favorite formula for basic salad dressing is three parts oil to one part acid, a little bit of an emulsifier (usually mustard and/or honey), and a healthy pinch of salt and pepper. Play around with the proportions to see what you like and experiment with different flavors and add-ins.

 

 

 

+ Emulsifier
+ Salt & Pepper

  1. Whisk everything but the oil together in a medium bowl.
  2. Slowly drizzle in the olive oil, whisking all the while, and tasting as you go. (If you want to cheat and emulsify the easy way, use an immersion blender.)

Once your oil has been added, you can always add more vinegar, honey, herbs, etc.

 

Our favorite ingredients to choose from:

3(ish) parts oil:
Extra Virgin Olive Oil – first cold pressing. You want the flavor to shine, so use the good stuff!
A dash of toasted sesame oil (a little goes a long way)
1(ish) part acid (use one or mix and match):
Fresh squeezed lemon or lime juice
Balsamic vinegar – check the ingredient list, good versions will contain grape must and nothing else)
Rice wine vinegar
White wine vinegar
(Really any vinegar can be delicious, just don’t use the plain white distilled vinegar that, while technically edible, is best relegated to cleaning purposes)
A Dash of an Emulsifier:
Mustard
Honey
Egg yolks
Mayonnaise
Yogurt
Soft cheese like goat cheese

Add-ins for Flavor:
Any fresh herb (Use your imagination!)
Garlic, minced
Salt and Pepper (Use liberally!)
